I've been having some trouble lately with my 2012 Acadia running hot while going down the highway (around 70MPH). The temperature gauge would start creeping up and get up around 230. I found that if I accelerated or downshifted that it would cool off.
I checked the radiator and changed the thermostat and nothing helped. I was going to pull the water pump off and look at it this morning but when I went to start it, the engine struggled to start. I looked at the coolant temperature gauge and was up a little bit off the bottom. That wasn't right because it sat all night and it was 30 degrees outside.
I changed the coolant temp sensor and it seems to have fixed it! I drove it about 20 miles and watched the gauge and my scan tool and it never went over 210.
