throttle control for under the hood work

Maybe a dumb question, I googled it but came up empty handed. In former days with carburetors and/or mechanical linkage it was easy to manually control engine speed while tinkering under the hood. Now with drive by wire it's not possible any more and I can't find any info on a way to do that. Is it possible, maybe with some electronic attachment?
 
Yes, engine speed can be controlled bi-directionally using a Tech 2 or an advanced scan tool. That said, I have had poor results using my VCX Nano and Tech 2 S/W running on my laptop; the RPM's hold for 5-10 seconds then drop back down to idle.

I have also had success with a bottle of beer . . . give it to my buddy while he manages the gas pedal.
 
I recently bought a cheap Chinese bidirectional scanner (xTool A30M), I'll have to look into that but I have my doubts.
