Which do you prefer? I do not plan on towing anything with my 2006 envoy xl denali. Looking for opinions on the best overall conversion to coil kit there is....

Coils are more reliableand cheaper to replace. Air bags are more expensive to replace or fix the system, trouble prone but more comfortable ride.

Don't need a kit really. Take bags out and replace with coils with some rubber isolators. Shocks can stay if they're still good.

If you're not looking to lift, I recommend the HD Bilsteins front / rear (ShockWarehouse.com has great pricing, at least in the US)

If you're thinking of a lift, others will chime in -- there are a few here that have lifted their 360s / 370s. But I don't think you can go more than 2", with the kits / parts still available on the market.
