Heres my problem. To replace a turbo on the Ford models (not sure on the Chevys), you have to remove the cab. How exactly is this done on these?

Of course it would be the "Elite" that's on a Chevy chassis. What would be able to tow the Fords when they break down 
At that point you might as well, just replace the Ford ....
