I've seen a lot of people say that the swap between an 06-07 head on an 02 block is straight forward but I don't know what I'll need to do electronics wise. So far I understand to simply swap over the head onto the 02 block but I've seen people say that a temp sensor is located in different places between these heads. I also am not sure if I'll be able to just plug up the new head, turn the key and be good to go. Please let me know if y'all have any advice. Thank you

It should work. You could keep your temp sensor where it is on your '02 block and leave the one in the '06 head there disconnected. The coils changed but I'm not sure if the connectors changed. If they are different, either you change the connectors and use the coils from the '06 or swap the valve cover and coils from the '02 head onto the '06 head and keep the same coils.

My only concern is regarding the exhaust cam phaser which changed from '02 to '06. I would put a cam phaser from an '02 to ensure compatibility. This may also force you to use the valve cover from the '02 as well, along with the coils.

Just out of curiosity, why are you replacing the head?

Wanted to build a turbo TB then realized the 06+ heads are better for doing what I want to do. Started tryna sell my 02 LTZ then saw nivlacs video of winning sweetsummer with a 05 block and 06+ head to make like 700hp so I thought, well I should just do that instead of buying a whole new TB. Also the heads making noise. Mainly hear it idling and when coming down in rpms. It needs maintenance but instead of maintenancing the old crap I might as well swap in the new head. Can't afford to do the full build rn but can start piecing it together.

You should contact Calvin (Nivlac57) as he is THE absolute authority on this engine, especially for turbo applications. You can also ask him how to prevent head bolts from breaking when taking them out as that happens a lot on these engines.
