Well your fuel pump going bad will give you bad miles, it did for me until I changed it and got all my mpg back. For staling the throttle body needs to be cleaning assuming it hasn't in quite sometime.

He's got a v8 and those don't need the attention that the 4.2 throttle body does. I'm just glad to see someone posting about the V8. You have what sounds like multiple issues but the fuel sensor is notorious on our platform. So bad GM offered to pay half of the replacement for current owners within some parameters that I don't remember.
It could be on its way out. Buy a fuel pressure gauge, preferably with a long hose so you can duct tape it to the windshield, take it out of a drive and have a friend observe the readings.
In my 2004 Rainier, the pump died around 65k-70k miles.
Was the gas level low??? when I get low on gas and I stop at a light... (makes it worse on inclines) the car either acts like it is going to stall.... or DOES stall. I pray it starts (and it has) and continue on... I have learned quickly not to wait until it gets close to red to fill up. I go until it hits the 1/4 mark and I fill up. No more issues
re: screwy gas gauge: Sounds like the level sensor is going out, too.
